Cosmic Color Pasta

الصعوبة: Low

الوقت: 25 min

التكلفة: Low ($)

المكونات

dried spaghetti 12 ounces

olive oil 2 tablespoons

garlic 3 cloves, minced

cherry tomatoes 1 pint, halved

baby spinach 4 cups

cream cheese 4 ounces

grated Parmesan 1/2 cup

salt 1 teaspoon

black pepper 1/2 teaspoon

red pepper flakes 1/4 teaspoon, optional

pasta water 1 cup reserved

التعليمات

Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente. Reserve 1 cup of pasta water, then drain.

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant.

Add the cherry tomatoes and cook for 3 to 4 minutes, stirring occasionally, until they begin to soften and release their juices.

Add the spinach and cook for 1 to 2 minutes until wilted.

Lower the heat and stir in the cream cheese, Parmesan, salt, black pepper, and red pepper flakes if using. Add a little reserved pasta water at a time until a smooth sauce forms.

Add the drained spaghetti to the skillet and toss until fully coated in the sauce. Add more pasta water if needed to loosen the sauce.

Taste and adjust seasoning, then serve warm with extra Parmesan if desired.
